What a fun week working with Gorton’s Seafood again and food stylist Helen Jones. We got to photograph some of Gorton’s signature fish products with new photography and updated design. Overall the imagery was beautiful, fresh, and natural feeling. A great product you can enjoy for dinner or even lunch. Can’t wait to see the final shots in stores! What a fun project to see grow from beginning to when it hit shelves! When I get to work with new clients on packaging it’s really my favorite thing to do! You get to shoot the product and immediately see it in the design layout through tethering the camera and see the project come to life. It’s really great when the product is of high quality and taste; which of course this was! It’s a new product line Gorton’s was working on. Delicious allergy-friendly recipes and quality of fish. It’s a step away from their traditional cut and styled fish you may be custom to seeing in stores. This had a more authentic approach in the styling and props. We got to use bright light that created more shadow and depth, the packaging was overhead, and the fish fillets we used were broken open showing the meaty fish flakes inside. Yum! The three types of fish were beer battered cod, black bean crusted haddock (personal favorite), and a citrus ginger salmon. They all had a crust to them and side sauce used to drizzle over top. Part 2! We had some more to do, which included these really cool stuffed products that had meat and cheese. Great for heating up on the go. Packaging work is some of my favorite work to do because there’s so much attention to the little details, and it can make or break a design. My team and Conagra’s agency out of Canada photographed the re-design of Odom Tennessee Pride’s breakfast and sandwich offerings sold in the frozen food section. The re-design was modern with a white wash wood surface and up to date propping and lighting to bring the food to life! It was a big project shot in 2 parts but we got through it. Excited to share what we put together so keep a look out for the items at your local supermarket.

This past shoot for Finlandia Cheese was so much fun. When your given the freedom to create the best sandwich using quality cheese the possibilities are endless. We got to spend the day making tasty heroic sandwiches using a variety of Finlandia’s new line of pre-sliced cheeses. They had great varieties and of course swiss! Working with Lisa Russell at her new studio was a great experience. The kitchen to shooting space is seamless. We had Apple TV wireless connection to show the shots large as we were shooting. Also the cool thing about the space is it’s inside center city Philadelphia’s String Theory School. We had high school students who are currently majoring in broadcast come in throughout the day to see what we do. The students were engaged and anxious to watch us work. It’s really nice when you can create work and give back to students at the same time. So rewarding!
Working with a group of creative, energetic, and talented people is what making a successful video is about. The time put into planning, executing, and producing makes that final piece all worth it. These are just some of first thoughts that come to mind working with ad agency Weber Shandwick, my food stylist Lisa Homa, props Kristine Trevino, hair and makeup Ananda Khan, camera crew of Good Boy Media, and talent Amy Castle. We produced beautiful recipe videos of the Alli brand highlighting their healthy lifestyle. The lighting throughout the pieces was bright with a natural daylight feel. We were able to produce this look for the whole day. Amy Castle’s personality shined through in these pieces running through the script with her. Right after Easter weekend I was on a flight to sunny Tampa, Florida for a week shoot at the new Features Gastropub inside the Riverview movie theater apart of Goodrich Quality Theaters out of the midwest. I was recommend for this job by friend and celebrity chef Brian Duffy. I was so excited for this job, not just because it was in Florida but the concept of the restaurant by Brian had some delicious entrees and beers on tap to try. Something I’ve rarely seen before is they had wine on tap! What?!! I got to work with the local and talented Marlene Forand for the week on executing the dishes and really bringing the ingredients to life. We had fun incorporating the wall signage in the background and making the dishes feel heroic. One of the coolest offerings they had was their Feature Fry Tower. This was stacked high of fries, shaved ham, provolone cheese, bacon, mozzarella and side sauces, yum!! I hope to go back soon and catch a movie in the theater. If you find yourself in the area for vacation make sure and stop by.
I know poached eggs look difficult and have a delicate quality to them. If you follow some basic steps to making these you will have no problem whipping them up next time for a weekend brunch at home!
Use fresh cold eggs.
Use the right vessel to get the eggs to the pot such as a large spoon.
Use the right vessel to get the eggs out of the water such as a slotted spoon.
Recipe for making perfect poached eggs
- Fill your pot with water that comes up to the edge about 1-2inches.
- Add 1 tsp of salt and 2 tsps of white vinegar.
- Bring the water to a simmer
- Crack your very fresh and cold egg into large spoon.
**If doing 2-3 eggs swirling the water in the pot like a whirlpool then dropping the egg in the center helps keep the egg white together.
Patience: Once eggs are added to the pot turn off the heat, cover and let sit for 5 minutes. Do Not Touch.
Remove egg with slotted spoon and serve!
It was so exciting to get the call for a new push Aramark was doing for their annual report and other advertising outlets. They wanted something fresh and to really "raise the bar" on their offerings to potiental clients. They are the 2nd largest in the food business in North America and have clients all over in different capacities. We had a day of shooting food items on different surfaces creating unique environments. Debbie Wahl handled the food styling and Lisa Russell did props. The agency creative flew in from California and Aramark came to the shoot. We had a lot of fun and came out with really exciting work! You can see a little B.T.S. below.
The holidays are an exciting time with the music, snow, gift shopping, and seasonal cocktails. It was exciting when a friend and photo editor reached out to me for a project for Village Voice! Myself and food stylist Jill Keller got to go around to 6 different bars in New York photographing 6 signature drinks the bar and bartenders worked on. Also it was great to reference if you wanted to try and make it at home for yourself. Each bar was very unique and fun to check out. I think my personal favorite was Miracle On 9th Street pop up bar by Nico de Soto. The bar was decorated like my grandma’s house around the holidays. There were so many nostalgic Christmas decorations. The drinks were served in these cute cups that looked like Santa. It was really exciting because after the story ran Bon Appetit Magazine was also doing coverage of the bar! Nico was doing live demo of making the drinks. I got to work with talented food stylists Jill Keller and we hopped around town going to each bar. It was fun!
A lot of my work takes me to the studio photographing recipes, and advertising work. Sometimes however I get to work on location! There was a new restaurant opening; really the first of it’s kind I’ve seen in the U.S. specializing in poutine. This new concept was in need of some professional photography. The buzz about this restaurant opening was growing quickly and they needed photography for their menu, website, and PR releases. Their current images were snap shots from their phone and were not of great quality. The graphic designer of the restaurant found me and thought I would be a good fit. How could I say no to a fun place like this.
Not everyone is familiar with this amazing treat but poutine originates from Canada, actually where the owners found the idea in the first place. The basic recipe consists of fries topped with cheese curds and brown gravy. This restaurant has taken it to another level with several other combinations any late night go-er would want or even a lunch rush option. We used to day of shooting to capture their different varieties of poutine as well as a couple slider options they were offering. The franchisee that was there mentioned sliders weren’t as popular and were hoping to create a new need for them. They were simple but delicious and not your normal thing you could order. Also another unique and tasty item they offered were milkshakes! You cannot go wrong with a “Tommy Like Wingy” poutine with a Little Baby’s Ice Cream milkshake; heaven!
While we were there and with brown paper still on the facade people were still asking if we were open yet?? I think they will be very successful in their poutine business.
It was great to work with the C-K Team again on a new advertising campaign for BFresh Supermarkets. These cool new hip supermarkets cater to a very specific niche in the market which is fresh, affordable without compromising quality. The designers, myself, and client worked closely to create food shots that best represent what BFresh has to offer by using their actual products and way it is prepared. These images will be used for advertising in print and online. C-K created these cute illustration fruits and vegetables that will be in the layout with the final food shots.
How was your Memorial Day weekend? What type of grilling did you tackle? For us we did a nice dry rub spare rib recipe. Color is always important and using the right amount of paprika really makes a difference. These were also on the spicy side, a nice change up from the usual BBQ sauce rub.
-1/2 cup turbino sugar
-1/4 cup normal paprika
-1/4 cup smoked paprika
-1 tablespoon salt
-1 tablespoon pepper
-1 tablespoon onion powder
-1 tablespoon garlic powder
-1 teaspoon cayenne pepper
-1/2 teaspoon ground thyme heaping
-1/2 teaspoon ground bay leaves sparingly
-yellow mustard rubbed on base of meat (makes the seasoning stick!)
*Let it soak overnight in fridge
-Baked 300 degrees 3 hours cover in foil
- Uncover and cook an additional 15 minutes
If anyone knows me, they know I have an appreciation for good beer. Ommegang Brewery in Cooperstown, NY has a variety of some of the best beers in the country. I knew of their brews before they became famous with the Game of Thrones specialty beer they put together. HBO came to them with the idea to create beer for the show! I’ve been in contact with the brewery before about working together, and finally the timing was right. Ommegang had recently redesigned their labels and needed updating for their brochure. There are about 8-9 beers that were re-done that needed to be photographed and paired with a food entree that spoke to the beer as well as their restaurant at the brewery. We planned the shoot around half of that because some were more of a priority than others. It was great working with these guys because of the creative freedom in the food styling and final recipes as well as the general prop direction. The shots had to have a rustic feel and clean background if they needed to run text over them. The main purpose for these shots was to update their brochure so vertical shots were needed. Working with my team and the designer from the brewery was a lot of fun and the day went smooth. In the video I included just a couple of my favorite final shots.

This year has had such a great start. One of my new endeavors has been reconnecting with an old and very talented friend who has developed an extensive business in the video production world.
The photography industry has been evolving so much so quickly taking a back seat would not be the best move. I need to continue to grow my team and work I produce while adding value to what I offer in the end. Motion work seemed like a natural next step. It’s still in the works and plenty of ideas to be story-boarded but were getting there! This is our first full feature video on pasta making. Not a quirky “how to” but more about the romantic view of making pasta by hand. Sourcing the right food stylist, color, and sound really brought this idea to life. I’m excited to continue this and see what myself and the production company come up with.

TRIVIA ANSWER: B. BALDIES
1. In a small bowl, dissolve yeast and 1 teaspoon sugar in 1 1/4 cup warm water. Let stand until creamy, about 10 minutes.
2. In a large bowl, mix together flour, 1/2 cup sugar, and salt. If the mixture is dry, add one or two more tablespoons of water. Knead the dough until smooth, about 7-8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn and coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour.
3. Preheat oven to 450 degrees. Grease 2 baking sheets.
4. In a large bowl, dissolve baking soda in 4 cups hot water; set aside. When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape. Once all of the dough is shaped, dip each pretzel into the baking soda-hot water solution and place pretzels on baking sheet. Sprinkle with kosher salt.
5. Bake in preheated oven until browned, about 8 minutes.

5 cups all-purpose flour

1/2 cup baking soda

Happy Easter Weekend! It is very early this year, I almost forgot about it :) A favorite snack of mine which you can have year round but certainly pops up at the Easter table is deviled eggs. A classic recipe with variations you can choose to do. For me I may use a little white or red onion in the yolk mix. You can certainly jazz is up with sprigs of dill and even bacon bits to the recipe!

I'm so excited to be working with The Art Directors Club on a food photography workshop at their NYC headquarters. It will be an exciting day of shooting food discussing how to craft your shot providing tips and tricks! Also touch on the benefits of working with food stylists and prop stylists. At the end will have a fun critique looking at what everyone shot.
