”Many independent restaurant owners have used personal savings or taken on new debt to support their employees. Restaurant workers accounted for the largest share of unemployment claims in March but less than 8.9% of approved PPP loans went to restaurants and hotels combined.
The IRC says restaurants contribute $1 trillion to the U.S. economy each year, and only 30% of them will survive the crisis if it lingers four months or longer.
Those who do emerge may face even more difficult tribulations after reopening their doors. The first thing survivors will need to do when they reopen is pay old invoices. Then they’ll have to hire and train a skeleton staff to help unveil a newly configured, socially distanced dining room that’s expected to be legally required to cut previous capacity by 50%.
Many restaurateurs will decide it’s just not worth taking on more debt and will permanently close shop. Some will have to reimagine their concept to accommodate a new dining room layout, no large groups and reduced tourism, plus either less service or higher menu prices. The rest will go back to business fully expecting to ring an average of 50% less revenue over the first 12-18 months than when the virus forced them to suddenly close.”

B.T.S. Clemens Food Group Campaign Photo Shoot
It was great to get a call from the Chicago office of The Food Group. It’s been a dream to work with these guys because we all share a true passion for food! We worked together on a B2B campaign for The Clemens Food Group showcasing a wide range of their quality pork products. The shoot consisted of 2 concepts over 2 days. The first day was to capture this large overhead scene of their raw pork products styled beautifully. Food stylist Nicole Twohy was perfect for the job. Her and her team in the kitchen brought out the prepped pieces while Kristine Trevino the prop stylist helped place them on the set. We had a layout to follow which was key to reference during the shoot.
The next day was fun; we got to create beautiful cooked pork recipes each plated uniquely for a table scene overhead as if you were dining at a restaurant. We had a hand model from Bella agency serving a platter into the top of the frame featuring juicy ribs, yum! Each recipe was carefully tested and chosen prior to the shoot so we knew which plating would work best and the colors all complimented each other. In the end we walked away with some great photos, couldn’t of done it without the team. Can’t wait to see these shots in the wild!

Photo Shoot Recap New Jersey Monthly: Osteria Radici
Any food that encompasses the style of Italian cuisine I’m all ears and appetite. It was great to work again with New Jersey Monthly on their July feature for Osteria Radici in Allentown, NJ. Owners Randy and Ally were great to work during the photo shoot. The dishes we got to photograph each had their own personality and flavor that was amazing to see. It was great to see their different plate ware and table dressings to incorporate into the photographs. Also the interior had a warm welcome. Check this place out!! Photo Shoot Recap: La Mercerie for The Village Voice
It was so fun to work on this photo shoot for The Village Voice covering the new all-day cafe La Mercerie. You walk in and immediately feel a cool energy surrounded with clean design. Chef Marie-Aude Rose was great to work with. The dishes seamlessly were brought to us to photograph. Just getting back from France I felt like I was on my honeymoon again! All the food was delicious, fresh, and unique! I loved the cantabric anchovies with vanilla butter. The specialty butters were also amazing. What was unique about the location was it was connected to Roman and Williams Guild. Everything hand picked without any corners cut. It really helped set the tone of the restaurant. French Food and Tires
Michelin star restaurants. We’ve all heard this before and something else that might come to mind is tires. In the states we do have Michelin Tire company, but would you think tires and great food go together? That’s exactly where it all started. To our surprise a visit to Beaune, France some of the restaurants had Michelin star ratings accompanied by the tire character. Was this a joke on America? No. This was a successful marketing move.
Michelin Tire Company is actually a French tire company. In 1900 the company came out with the Michelin Guide. It was a guide designed for Michelin tire customers suggesting top lodging, and food destinations. The customers would follow the guides meaning more travel, and more use on the tires, in turn more sales! Today is has evolved into the highest rating for chefs all over the world. It has a star rating 1 to 3 star ratings.
Photo Shoot Recap: Reynard
Despite the crazy snow we had the shoot must go on! Reynard; a great restaurant in Brooklyn below the Wythe Hotel, and steps from The Brooklyn Brewery. I got to work with the new chef Christina Lecki who worked under April Bloomfield in the past. The kitchen has an amazing wood-fired hearth perfect for photo backdrops. Chef Lecki is really experimenting with simple, meaningful dishes packed with honest flavors. Keeping it simple I feel is always best and not going crazy with 100 ingredients for a dish. We were there capturing all her new dishes which are seasonal. They are open for breakfast, lunch, and dinner so there was quite the array of food. My personal favorite was the Socca dish. Runner up was the bone broth soup poured table side. Delicious! Especially with the snow falling outside. The plates were made by Jono Pandolfi which had some weight and earthiness to them, tying in great with the food palate. If you haven’t been here in the past make sure to stop by soon!
Photo Shoot Recap: Angeline by Michael Symon
I try not to geek out when it comes to celebrity chefs, especially now when everyone is on some type of food show BUT to meet and work with chef Michael Symon was awesome. I was hired for a magazine to capture the new Italian restaurant by Michael Symon called Angeline at the Borgata Casino. The Borgata is probably one of the most well known and visited casinos in Atlantic City with great stores and restaurants within. This new restaurant the locals have been waiting and raving about to open! Whenever Michael would come by the restaurant to talk with front and back of house staff, fans of his would line the windows looking in trying to grab a picture of him.
When I visited they had already been open and had quite the momentum of customers. We stuck around that day for when they did open for dinner to grab photos and literally there was a line down the hall waiting to get in! I’ve never seen that before. I don’t blame them, the Italian fare I photographed and tried was top notch. The lasagna was perfect with its layers of meat and sauce, the artichoke heart appetizer was so tasty, the mozzarella was the freshest, the list can go on. Working with Michael was great, he was down to earth and a good honest cook. We captured some lifestyle shots of him slicing meat, and some environmental portraits of him in one of the dining rooms.
The staff of Borgata that helped with the shoot were very welcoming and clearly took hospitality seriously. I highly recommend checking out the Borgata casino if you’ve never been. Even if you don’t gamble go for the stores and stay for the food.

Here’s a re-cap from my recent shoot at The Standard in the East Village. This bar was gorgeous and just steps from The Cooper Union, another site to see. It’s always great when working with The Village Voice because they really let you be creative with the subject matter for their stories. This was a fun shoot with bartender Natasha Sofia mixing the drink “No Problem” from the menu. I’m not a huge mixed cocktail drinker but if you can mask the taste of the alcohol i’m good to go! Also what I loved about this drink was the garnish. The vibrant slice of orange dipped in a red salt really completed this drink. B.T.S. Features Gastropub In Sunny Florida!
Right after Easter weekend I was on a flight to sunny Tampa, Florida for a week shoot at the new Features Gastropub inside the Riverview movie theater apart of Goodrich Quality Theaters out of the midwest. I was recommend for this job by friend and celebrity chef Brian Duffy. I was so excited for this job, not just because it was in Florida but the concept of the restaurant by Brian had some delicious entrees and beers on tap to try. Something I’ve rarely seen before is they had wine on tap! What?!! I got to work with the local and talented Marlene Forand for the week on executing the dishes and really bringing the ingredients to life. We had fun incorporating the wall signage in the background and making the dishes feel heroic. One of the coolest offerings they had was their Feature Fry Tower. This was stacked high of fries, shaved ham, provolone cheese, bacon, mozzarella and side sauces, yum!! I hope to go back soon and catch a movie in the theater. If you find yourself in the area for vacation make sure and stop by.

My Winning Photo for The Culinary Trust Award for Food Photography That Makes a Difference
This was exciting news to find out I won The Culinary Trust Award for Food Photography That Makes a Difference for 2017! IACP (International Association of Culinary Professionals) is the food industry community you need to be apart of. First started by Julia Child, Jacques Pepin, and Anne Willan in the mid 70’s. This organization has evolved into bigger and better offerings with today including people in the food industry beyond chefs. The photography aspect of IACP is very important to me because it’s my specialty; food and beverage. The opportunities to network and get my work noticed like entering their contest is very valuable for me. My personal series I did on chicken processing was so unique I had to enter it in this years contest. It was exciting news when I heard I was a nominee for my category!

Photo Shoot: Village Voice Magazine
Shot at The Up and Up
The holidays are an exciting time with the music, snow, gift shopping, and seasonal cocktails. It was exciting when a friend and photo editor reached out to me for a project for Village Voice! Myself and food stylist Jill Keller got to go around to 6 different bars in New York photographing 6 signature drinks the bar and bartenders worked on. Also it was great to reference if you wanted to try and make it at home for yourself. Each bar was very unique and fun to check out. I think my personal favorite was Miracle On 9th Street pop up bar by Nico de Soto. The bar was decorated like my grandma’s house around the holidays. There were so many nostalgic Christmas decorations. The drinks were served in these cute cups that looked like Santa. It was really exciting because after the story ran Bon Appetit Magazine was also doing coverage of the bar! Nico was doing live demo of making the drinks. I got to work with talented food stylists Jill Keller and we hopped around town going to each bar. It was fun!

Cheesesteak Poutine
A lot of my work takes me to the studio photographing recipes, and advertising work. Sometimes however I get to work on location! There was a new restaurant opening; really the first of it’s kind I’ve seen in the U.S. specializing in poutine. This new concept was in need of some professional photography. The buzz about this restaurant opening was growing quickly and they needed photography for their menu, website, and PR releases. Their current images were snap shots from their phone and were not of great quality. The graphic designer of the restaurant found me and thought I would be a good fit. How could I say no to a fun place like this.
Not everyone is familiar with this amazing treat but poutine originates from Canada, actually where the owners found the idea in the first place. The basic recipe consists of fries topped with cheese curds and brown gravy. This restaurant has taken it to another level with several other combinations any late night go-er would want or even a lunch rush option. We used to day of shooting to capture their different varieties of poutine as well as a couple slider options they were offering. The franchisee that was there mentioned sliders weren’t as popular and were hoping to create a new need for them. They were simple but delicious and not your normal thing you could order. Also another unique and tasty item they offered were milkshakes! You cannot go wrong with a “Tommy Like Wingy” poutine with a Little Baby’s Ice Cream milkshake; heaven!
While we were there and with brown paper still on the facade people were still asking if we were open yet?? I think they will be very successful in their poutine business.
Photo Shoot New Jersey Monthly: Cave A Paleo Eatery
Just wanted to share a quick recap from a recent shoot for New Jersey Monthly! They asked me to shoot this charming restaurant near Asbury Park, New Jersey called Cave, A Paleo Eatery. I’m always interested in different diet plans people choose to live by and Paleo is certainly one many people know! It was great chatting with Chef Doug Stehle; chef and owner of the restaurant who eats a Paleo diet and runs his restaurant as one. The staff was super friendly and excited to see me there taking photos. The restaurant itself used to be owned by a antique dealer and when it was sold to Doug the previous owner still had some items there for sale. It gave the restaurant a unique feel. Also Doug is a surfer and being near the ocean there was appropriately placed surf boards he owned decorating the restaurant! All the items on his menu were dairy and gluten free. I tasted a couple things from the menu and I have to say their desserts were nothing like I had before. Their brownie was so rich and packed with chocolate it was the best thing I’ve ever had. There was also bacon on top! It probably took me 2 or 3 sittings to actually finish it. Also the chocolate chip cookies were stuffed with chocolate chips and the cookie itself was soft just like a homemade cookie. If you make a trip this way I would certainly stop in for lunch or dinner.
First Look: Motion Reel
This year has had such a great start. One of my new endeavors has been reconnecting with an old and very talented friend who has developed an extensive business in the video production world.
The photography industry has been evolving so much so quickly taking a back seat would not be the best move. I need to continue to grow my team and work I produce while adding value to what I offer in the end. Motion work seemed like a natural next step. It’s still in the works and plenty of ideas to be story-boarded but were getting there! This is our first full feature video on pasta making. Not a quirky “how to” but more about the romantic view of making pasta by hand. Sourcing the right food stylist, color, and sound really brought this idea to life. I’m excited to continue this and see what myself and the production company come up with.

2015 In Review
2015 is coming to an end. I continue to grow and learn as a photographer and business owner. There are many things I can say about this past year and where I see myself in the future, however I always like to turn to inspirational quotes by successors I’ve learned from who just say it so much better. This was a great project we were able to pull together right after the Thanksgiving holiday. The client was working on a tight deadline with the restaurant having a soft opening and then opening for business start of the week! We were able to capture their authentic smoked meat dish offerings and showcase their amazing bar assortment. The restaurant had an amazing interior designed from the ground up with reclaimed wood and decor. The restaurant sat on a busy street just outside Washington D.C. It is housed with the historically preserved “EAT” sign having their own neon sign to match. Their smoke master and Food Network winner Matt Lang had some impressive dishes to share and we were excited to be apart of it.

Photo Shoot New Jersey Monthly: Asbury Festhalle & Biergarten
I recently was hired by NJ Monthly to photograph the new Asbury Festhalle & Biergarten in Asbury Park, New Jersey. The drive was ok, but well worth it when I pulled up to the front of this stoic, beautifully crafted building right on the water. It looked like the exterior was the shell of a old factory and walking in it certainly had the reclaimed look. The interior had floor to ceiling windows, exposed brick and artifacts filling the room. There were rows of communal tables with the backdrop of hand painted murals representing the good old days! This location seated so many people it was not a surprise to walk up a few flights of steps to this huge bar roof deck that had tiered seating. The walls were covered in this beautiful floral and greenery arrangement for aesthetics and energy.
If the building itself wasn’t impressive enough Chef James Avery had such a passion and experience for German fare it was a match made in heaven. I quite possibly tried and photographed everything on their menu. There were some specifics for me to cover like the bavarian pretzels, beers, potato pancakes, but also their oysters “Braten”. These oysters were served hot on a bed of salt baked with pretzel crumbs and herbs. The flavors were unreal! Another favorite of mine from the menu was the Blumenkohl; fried cauliflower.

Finally the week is coming up! I'm soo pumped to be meeting with Art Directors and Photo Editors from top agencies at NYC Fotoworks. I've been busy shooting and building new work for my book. ALSO will be premiering my new logo designed by the uber talented Nick Prestillo from AIGA. Book edit was done by my friend and photo consultant Neil Binkley
Italian Market Street Festival 100th Anniversary
This past weekend marked the 100th anniversary of the Italian Market Festival in Philadelphia. Originally from Philadelphia and being Italian(oh! and to continue my after-birthday shenanigans) it made complete sense to come out for the weekend to walk the crowded 9th street to drink and eat my way through! The Italian Market has evolved tremendously including more of a Mexican inspired neighborhood while still keeping to its roots and classic Italian food. Some staples you can find along the street are Sarcones, Ralph’s, Monsu, Di Bruno Brothers, Claudio’s, and Fante’s (the original William and Sonoma.)
The festival kicks off on Saturday May 16th at 11AM and closes Sunday May 17th. The streets are packed with people hustling through trying pulled pork sandwiches, grilled mango and corn on a stick, indulging in elaborate pineapple Pina Colada drinks. This is just naming a small portion of what you will find. Among the food vendors on the streets the produce stands are also open as well as the brick and mortar retail shops. Artists are also invited for the weekend selling their hand made goodies whether a scarf or a flask made out of clay! At certain intersections were stages with live bands playing covers of the latest hits or a DJ playing tunes. You could be drinking a beer and standing around having a good time. This year was certainly a fair not to be missed.
Photo Shoot: Celebrity Chef Jose Garces
When I began my career as a food and beverage photographer the restaurant scene was a huge part of it. I lived for the Food Network and the chefs with their competitions and daily cooking segments. Honestly I kinda still do... These are the people, along with the Food Network and other national food brands that have shaped the food scene we know today. One of the first chefs that I admired and built his roots in Philadelphia was Chef Jose Garces. I followed him in his early stages before he became well known.
The first time I met him was while I was still an assistant and the photographer I was working with had to shoot him. We photographed him at his amazing restaurant Amada in Old City. I was overly joyed and could not wait! Chef Garces was so nice and down to earth and I shamelessly got his autograph on one of his menus which I still have today in my kitchen. This was right before he aired on Iron Chef America which he won and the rest is history for him..
It was very exciting to see me come back to him and he's still the same nice guy, but this time I got to photograph him and his restaurant Distrito in Moorestown, New Jersey. One of his newer adventures in his many restaurants he's opened. The images were photographed for an article that will be running in the March 2015 New Jersey Monthly magazine.
